Last weeks meal plan went well. Big hits with the kids were the Potato Leek Soup (I blended it and they actually liked it, they are soup-haters!) and the Carrot Burgers (next time I'll puree the carrots). Here is what this week looks like:

Monday - Leftovers

Tuesday - Salmon, Rice and Veggies (didn't get to this one last week)

Wednesday - Slow Cooker Lasagna

Thursday - Slow Cooker Chicken Dinner

Friday - Slow Cooker Sweet and Tangy Chicken (I'll use pork steaks in stead of chicken), salad and rice

Saturday - Marinated beef steaks, Stewed potatoes and veggies

Sunday - Deli meat sandwiches and fruit slices with yogurt

You'll notice a lot of slow cooker recipes this summer. The boys have sports every day (mon-fri) at 6 and I'm off work at 5 so this is the easiest way for me to ensure a hot meal is eaten before we head off to the field! My Sunday evenings are open again since our children's program at church is on hiatus for the summer so I added it back into the weekly plan. I too love the slow cooker. I am putting a roast in it now!! It is sometimes the only way I have a hot meal at the end of a long day- and its nice to come home to a cooked meal while you at work!
